Cookies? Any flavour you would have wished for. Crepes? Both savoury and sweet. Cakes? Even vegan ones, shaped like trees and covered in coconut snow. As I was lucky enough to have a mom that loves cooking, my childhood was pretty much one journey through heavenly homemade goods. However, I have always lacked the skills and the patience to master really complex dishes. This was not a problem at all, until a year ago when I have started university, and after two weeks of store-bought soups and frozen ready meals, I knew that I need to start cooking. Thus, after constant research and experimenting with flavours, I have managed to create this short vegan guide that covers my top and most used recipes. Simple, fast, and delicious. What would you want more?
BREAKFAST
Porridge
The to-go option that has always helped with both saving money and time will always be porridge. The toppings are endless, but these two combinations are the ones that I would highly recommend!
Smoothie Bowl
I think that while trying to find the perfect dish, balance is key and this is something that I have aimed for with this tasty green goodness. This smoothie bowl will satisfy both a sweet and savoury lover due to the combination of flavours. What I love even more about this option is that you can make it beforehand, store it in the fridge and grab it whenever you need it!
LUNCH
A good old toast is always welcomed, especially when it comes both in savoury and sweet styles. This is an easy way to come up with a colourful and nutritious lunch in 5 minutes. The key is to be creative!
DINNER
‘It’s almost 7 PM, there is nothing in the fridge and I don’t even want to think about cooking now’. Sounds familiar? Well, this is me most of the time. Unfortunately, I have tried meal-prep in the past, but the idea of taking almost an entire day to prepare all the food for the following week just did not work for me. Thus, the plan was simple: the 4-rule – select a base, add your favourite veggies, cook your protein of choice and play with toppings.
SNACKS
When it comes to snacks, I have to admit that I am usually tempted to try different bars and biscuits that can be effortlessly bought from the grocery store. However, as I have previously mentioned, equilibrium is everything and this is how I came up with these home-made delightful versions of my top choices. Also, the thing that I love the most is the versatility of these options: you are more than welcome to swap the pumpkin with chocolate chips or the apples with pears if you enjoy those more. Have some fun!
DESSERT
It’s pancake time! What can I say more? You have sweetness from the chocolate, a refreshing vibe from the fruits, and the crunchy texture from the nuts. This one is especially worth trying when you crave a dessert, but you are unsure what to go for. The solution? Just have a little bit of everything!
